Phoenix Mita was founded in Niigata Prefecture by the first-generation entrepreneur Kobayashi Yonezo. Later, he was invited by the Tokugawa family to guard Nikko Toshogu Shrine in the Edo period. Sake brewing began in the Houtaiji Street of Mita Village at the entrance to Nikko.

The sake rice used this time is "Ferry" and "Yamada Sui", which are said to be the parents of "Yamada Nishiki" and the most original sake rice. After more than 100 years of history, sake brewing has reproduced Miguang ~BEIKO~, showing New Origin with the latest technology.
