Niigata's No. 1 sake brewery, famous for "Etsu no Shiratori", launched the mountain series it has been researching for many years for the first time in 2007. We use 5 million koku of local sake rice, and also specially use Yuedan Ryoko rice grown on the terraces in the local mountains. This is unfiltered raw wine that is bottled directly after the first pressing. It has a rich fruity aroma.
